CURING OLIVES
An ancient, simple and 100% natural process to preserve this fruit all year round.
Service Description
Knowing ways to preserve food without electricity, a freezer, or a refrigerator gives you a lot of freedom and possibilities. Here we will show you Grandma Angelita's recipe for preserving delicious olives as they used to be done in the old days. The whole process takes several days, as the fruit must first be washed day after day until it loses its bitterness. It is then placed in brine and seasoned with aromatic herbs, and then you have to wait, sometimes for months, for it to soften and take on the right texture and flavor. We will have freshly picked olives for you and show you how to wash them, after which we will take others that have already been washed for several days and put them in brine, which we will prepare together. Finally, we will arrange the olives in the jar in the best way to preserve them. You will take home a small jar to leave to mature at home, if you think you will remember, or a ready-made one if you think you would otherwise forget and they would go to waste. And enjoy! Bear in mind that as they sweeten, a layer of mold sometimes appears on top over time. This is not harmful; it can be removed and the rest is perfectly safe to eat.
